The purpose of drying is to drain water completely in the coffee bean after washing. If the coffee is not drain and move to dry immediately, it will produce the phenomenon called “boiling the bean”, creating a hard film cover the coffee beans, it will prolonge the drying time and uneven drying affect to the quality of the finished coffee. Draining can shorten the drying time, the moisture of coffee bean can be reduced by 7-10% after this stage.
